What comes before your main course ??? APPETIZER LAH !!!!
Canapes may be defined as bite size open-face sandwiches. The variety of possible combinations is nearly unlimited. Most canapes consist of three parts base, spread and garnish.
Base:
Spread:
Base:
Many of these items, such as crackers and melba toasts can be purchased ready made, but bread and toast croutons are the most widely used and offer the lowest food cost, though they require more labor. Untoasted bread for canapes should be firm enough to allow the finished product to be handled easily. It may be cut thick and flattened slightly with a rolling pin to make it firmer. Toast is, of course, firmer and it gives a pleasing texture and crispness to the canapes.
Spread:
Canapes spreads may be as simple as butter or softened cream cheese, but it is better to use a more highly flavored spread because, sharp or spicy flavors spread are better to stimulate one persons appetite. The spread should be thick enough so that it clings well to the base and so that the garnish sticks to it without falling off. The spread is needed so that the base doesn't get soggy due to soaking up moisture from the filling of the canapes.
Garnish:
Garnish:
The garnish of a canapes is a decoration item or combination of items placed on top of the spread so that it beautifies the overall looks, its like a girl wearing make-up, foods need their make-up too. It may be a major part of the canapes, such as a slice of ham or cheese or it may be a small tidbit that is selected for colour, design, texture or flavor accent, and such a pimiento cutout, a slice of radish, a caper or a dab of caviar. Even the spread can be used as a garnish. For example, you may make a canapes with mustard butter spread and slice ham and then decorate the ham with a border or design of mustard butter piped on with paper cone.
Lets take a look at the appetizers in the food industry

Sandwich Maniac
What is a sandwich ? Sandwich is a favorite and convenient lunchtime food. It is quickly made and serve, adaptable to so many variations that it satisfies nearly every taste and nutrition requirement. Sandwich has long been the domain of the pantry department, along with salads and other cold preparations. However, when you consider that the most popular sandwich today is the hamburger, you realize that sandwich preparation is as much the responsibility of the short order cook as it is of the pantry cook.
For speed of production, sandwich bread are cut in slices from rectangular bread, when it has been filled the crusts/side of bread are removed and the sandwich soon will be cut into shapes ( finger, squares or triangle )
After all the cock stories about sandwiches why not take a look at some sandwiches i made

Sandwiches may be made from many kind of bread, fresh to toasted, in a variety of shapes and with an almost endless assortment of fillings. They may be garnished with potato chips or vegetable crudites and a little salad.
The preparation of sandwiches require a great deal of handwork, especially if the sandwiches are multi-deckers or have several ingredients. Whether you are making sandwiches in quantity or to order, your goal must be to reduce your motions to make the production as efficient and quick as possible.

French knife or also called a Chef's knife - Most frequently used in the kitchen for general- purpose chopping, slicing, dicing, and so on. The blade is wide at the heel and tapers to a point. Blade length of 10 inches is most popular for general work. Larger knives are for heavy cutting and chopping. Smaller blade are for more delicate work. Which one comes first ??? The EGG ? OR the CHICKEN ??
Everyone start our very first dish with an egg example , one little kid holding a cigarette in the hands stares at the kitchen stove and think ... What should he cook for breakfast ? An idea struck his mind " FRIED EGG" . But how easy is it to prepare a variety of dishes with just eggs ? Eggs are delicate foods which are very very hard to handle, let me explain the structure of an egg.
EGG - Oeuf
Eggs are a versatile and highly nutritious food. The shell constitutes the outer surface of the egg. A thin membrane made up of the inner and layer is on the inside of the shell. The air cell at the large end of the egg forms as moisture is lost. The size of the air cell denotes the age of the egg. The egg white is composed of three layers. Next to the shell is a thin soft, white layer, the layer next to it is thick, viscous and white and a thin white layer surrounds the yolk are separating it from the thick white.

The Chalazae is strand of white substance on each side of the yolk that keep the yolk near the center of the egg. The yolk is made up of layers and is separated from the white by a very thin membrane.
Many nutrients required by the human body are found in the egg: Water, Protein, Fats, Minerals, Vitamin A, Thiamine (B1), Riboflavin (B2), Vitamin D and Niacin. Lecithin, which contains phosphorus, is found in the egg yolk. There are approximately 74 calories in a whole egg.
PHEW !!!! tired of talking craps about the egg. Why not look at some delicious egg dishes which are served only at 5-6 star hotels around the world.
